Introduction

Sheep casings are made from sheep's small intestines. They are highly elastic, have an excellent taste, are highly nutritious, and are safe. They are mainly produced in Australia, New Zealand, the Middle East, and China. They should be stored in a cool, dark place at a temperature between 4°C and 8°C. During storage, the casings are soaked in brine or covered with salt. They are mainly used for steamed sausages, fresh sausages, or grilled sausages, such as Vienna sausages, Frankfurt sausages, kabana sausages, Nuremberg sausages, etc.
